Spice Night

We ran out of a couple of basic spices again, and more importantly, I was going out of my mind reading about random access memory so I got out the spice pan and the spice grinder. For sure, for sure, for sure, I have eaten more spices in the last ten months then I have in my entire life. From the upper left and clockwise they are; chile powder, ground cumin, curry powder, and garam masala. The chile powder and the ground cumin are respectively, dried red chiles, toasted and ground and cumin seeds, also toasted and ground. The recipes (if you will) for the other two are below. I add more pepper or chile powder than the recopies ask for and it makes it better. That's not opinion, it's a fact. Strangely, I have yet to see a curry powder recipe that calls for curry leaves. What do you make of that?
