Hello there. I am very much looking forward to following your experiences in India. Your blog looks lovely, and I hope that your adjustment period to your new home is an easy one.
As for storing spices in the dabba - the one I have has a tight internal lid that keeps out most of the air from the jars. Still, it's not an airtight seal. If you wanted to be truly anal retentive about the spices, I would probably replace them about every 6 months. Otherwise, I just keep the dabba in a dry, cool place. Not sure that really answers your question though. Feel free to email me at annakush at gmail dot com if you think there is anything else I can help with!
